Lemon Butter Garlic Shrimp with Asparagus on a Sheet Pan

1 pound fresh asparagus, trimmed

2 tablespoons olive oil, divided

4 cloves garlic, minced

1 ½ pounds uncooked medium shrimp, peeled and deveined

1 teaspoon paprika

3 tablespoons butter, cubed

3 tablespoons lemon juice
Instructions

Preheat your oven to 400°F (200°C). Line a 9x12-inch baking sheet with parchment paper and lightly coat with cooking spray.

Spread the asparagus onto the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with garlic, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Toss to coat evenly. Arrange the asparagus in a single layer.

Roast the asparagus in the oven for about 6 minutes until slightly tender.

Remove the pan from the oven. Add the shrimp to one side of the pan and drizzle with the remaining 1 tablespoon of olive oil, 1 teaspoon of salt, 1/2 teaspoon of pepper, and smoked paprika. Toss the shrimp to coat and arrange them in a single layer beside the asparagus. Place cubed butter over both the shrimp and asparagus.

Return the pan to the oven and roast for an additional 6 minutes, until the shrimp are fully cooked and opaque.

Once done, remove the pan from the oven and drizzle the dish with fresh lemon juice.
