Lemon Herb Roasted Chicken

½ teaspoon seasoning salt

½ teaspoon mustard powder

½ teaspoon ground black pepper

1 (3 pound) whole chicken

2 lemons, juiced

2 tablespoons olive oil
Cooking Instructions
Preheat the oven to 350°F (175°C).
In a small bowl, combine Italian seasoning, garlic powder, seasoning salt, mustard powder, and black pepper; set aside.
Remove the giblets and rinse the chicken thoroughly. Place it in a 9x13-inch baking dish. Sprinkle 1 1/2 teaspoons of the spice mixture inside the cavity of the chicken. Rub the remaining spice mixture all over the outside of the chicken.
In a separate bowl, mix together lemon juice and olive oil. Drizzle the mixture evenly over the chicken.
Roast in the preheated oven for about 1 1/2 hours, or until the juices run clear. Baste the chicken several times with the remaining lemon-oil mixture during the cooking process.
