Lemon-Pepper Salmon Delight

Ingredients List

2 tablespoons olive oil

4 (4 ounce) salmon steaks

1 teaspoon minced garlic

1 tablespoon lemon pepper

1 teaspoon salt

¼ cup water
-
1 cup chopped fresh tomatoes

1 cup chopped fresh cilantro

2 cups boiling water

1 cup uncooked couscous
Instructions
In a large skillet, melt the butter and olive oil over medium heat. Add the salmon and season with garlic, lemon pepper, and salt. Pour in 1/4 cup of water around the fish. Add tomatoes and cilantro, cover the skillet, and cook for 15 minutes or until the salmon flakes easily with a fork.
Boil 2 cups of water in a pot. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes. Serve the salmon over the couscous, and drizzle the skillet sauce on top.
