Lentil Patties (Cakes)
Ingredients List

1 cup dry brown lentils

2 ½ cups water

¼ cup milk

1 cup wheat and barley nugget cereal (such as Grape-Nuts™)

2 large eggs, beaten

½ cup chopped walnuts

1 (1 ounce) envelope dry onion soup mix

½ teaspoon poultry seasoning

2 tablespoons vegetable oil

1 cup seasoned dry bread crumbs
Cooking Instructions

Combine lentils and water in a saucepan. Bring to a boil, cover, reduce heat, and simmer for about 30 minutes until the lentils are tender. Drain the excess water.

In a large bowl, mix the cooked lentils, milk, wheat and barley cereal, eggs, walnuts, onion soup mix, and poultry seasoning. Use your hands to blend the mixture—it will be thick. Let it sit for 30 minutes or refrigerate overnight.

Heat oil in a large skillet over medium heat. Scoop portions of the lentil mixture using an ice cream scoop. Roll them in bread crumbs and flatten them into patties. Cook the patties in the skillet, frying until golden brown on both sides, about 5 minutes per side depending on the thickness.
