Lentil Patties

Ingredients List

2 ½ cups cooked lentils

1 small onion, diced

1 egg, beaten

¼ cup diced bell pepper

⅛ cup Italian-seasoned bread crumbs

⅓ cup shredded mozzarella cheese

1 teaspoon olive oil-packed minced garlic

1 pinch salt

1 pinch ground black pepper

¼ cup cornmeal, or as needed

1 tablespoon olive oil
Cooking Instructions

Pulse the lentils in a food processor until roughly ground, then transfer them to a large bowl.

Combine the onion, egg, bell pepper, and breadcrumbs with the lentils. Add in mozzarella cheese, garlic, salt, and pepper, and mix everything well.

Divide the mixture into four equal portions, shape them into balls, then flatten them into patties.

Coat the patties by dredging them in cornmeal placed in a shallow dish.

Heat olive oil in a wide skillet over medium-high heat. Fry the patties until golden brown, about 5 minutes per side.
Chef’s Tip
This recipe is inspired by Butter Bean Burgers, originally shared by Dinogo user SILVERWOLF.
If you prefer, you can deep-fry the patties in 1/4 cup of oil, but I find that pan-frying makes them extra crispy.
For a more rustic texture, you can mash the lentils by hand instead of using a food processor, but be sure to leave them a bit chunky.
