Louisiana-Style Shrimp and Grits

½ cup diced tasso ham

2 tablespoons diced onion

2 tablespoons diced green bell pepper

20 medium shrimp, peeled and deveined

¼ cup white wine

1 cup heavy whipping cream

salt and ground black pepper to taste

1 tablespoon chopped green onion, green parts only
Instructions

Bring water to a boil in a saucepan with a pinch of salt. Gradually stir in the grits, constantly mixing. Lower the heat and let the grits simmer until they become soft and creamy, which should take about 20 minutes. Stir occasionally and keep the grits warm when done.

Heat olive oil in a large skillet over medium-high heat. Add tasso ham and cook until it crisps up. Stir in the onions and bell peppers, cooking for about 4 minutes until the onions become translucent. Add shrimp to the skillet and cook for 30-45 seconds, just until they turn pink, then remove them from the pan and set aside.

Pour white wine into the skillet and stir to loosen any browned bits from the bottom. Slowly add the cream, lower the heat, and let the sauce thicken over about 10 minutes. Season with salt and pepper to taste.

Plate the grits by dividing them onto two plates. Arrange 10 shrimp on the edge of each plate, then drizzle the creamy sauce over the grits. Garnish each plate with chopped green onions.
Chef's Tip
Tasso is a spicy Cajun cured ham, but it can be tricky to find outside of Louisiana — especially in the northern parts of the state. However, it may be available at specialty or gourmet food stores. If it's unavailable, you can substitute with salt pork, pancetta, or prosciutto, just remember to adjust the seasoning as tasso is quite flavorful.
If you're planning a wedding reception, try serving shrimp and grits in martini or shot glasses with the grits at the bottom and shrimp and sauce on top. Add a sprinkle of cheese for extra flavor.
