Matzo Lasagna for Passover

6 matzo sheets

4 large eggs, lightly beaten

1 (24 ounce) carton cottage cheese

1 (8 ounce) package shredded mozzarella cheese, divided

1 (28 ounce) jar marinara sauce
Cooking Instructions

Preheat your oven to 350°F (175°C).

Soak the matzo sheets in a large bowl of hot water for about 30 seconds, or until softened. Drain the water.

In a bowl, combine the eggs, cottage cheese, and half of the mozzarella cheese. Spread 1/2 cup of marinara sauce in the bottom of a 9x13-inch baking dish. Place 2 matzo sheets over the sauce, then pour another layer of sauce over the matzo. Add half of the cheese mixture, then another layer of sauce. Continue layering with the remaining matzo, cheese mixture, and sauce, finishing with a top layer of sauce. Sprinkle the remaining mozzarella cheese on top.

Bake in the preheated oven for 30 to 40 minutes, or until the cheese is melted and the sauce is bubbly.
