1 turkey (12 to 14 pounds), fresh or frozen, thawed

Instructions for Preparation

Position the oven rack in the lowest setting and preheat the oven to 325°F (165°C). Set up a roasting rack in a shallow pan. In a small bowl, combine sage (or poultry seasoning), paprika, seasoned salt, garlic powder, black pepper, and nutmeg.

Pat the turkey dry using paper towels. Place the turkey breast-side up on the prepared pan. Sprinkle half of the seasoning mixture inside the turkey and stuff it with onion and bay leaves. Brush the turkey breast with oil, then rub the remaining seasoning mixture all over the turkey, including under the skin. Add 1/2 cup of water to the pan and cover the turkey loosely with aluminum foil.

Roast the turkey for 1 hour. Remove the foil and continue roasting for an additional 2 to 2.5 hours, or until the internal temperature reaches 165°F (175°F in the thigh), basting with the pan juices occasionally. Once done, take the turkey out of the oven and let it rest for 20 minutes. Transfer to a platter or carving board to slice. Reserve the pan juices for gravy or to serve with the turkey.
