Mediterranean Baked Chicken Breast Made Easy

Ingredients
-
2 (8 ounce) skinless, boneless chicken breasts
-
salt and freshly ground black pepper
-
¼ cup olive oil
-
¼ cup freshly squeezed lemon juice
-
1 clove garlic, minced
-
½ teaspoon dried oregano, or more to taste
-
¼ teaspoon dried thyme, or more to taste
Instructions
Season the chicken breasts with salt and pepper, coating them evenly on all sides. Place the chicken in a bowl or airtight container. In a small bowl, mix together olive oil, lemon juice, garlic, oregano, and thyme, then pour the marinade over the chicken. Let it marinate for 10 minutes at room temperature.
Preheat your oven to 400°F (200°C) and position one oven rack about 6 inches from the heat source.
Place the chicken breasts in a baking dish and pour the marinade over them.
Bake the chicken on the middle rack of the preheated oven until the center is no longer pink and the juices run clear, about 35 to 45 minutes depending on the thickness. Then, transfer the dish to the top rack and broil the chicken for about 5 minutes until browned and crispy.
