Pork Roast with the Ultimate Spice Rub

½ teaspoon ground ginger

½ teaspoon smoked paprika

¼ teaspoon dried thyme leaves

1 (2 1/2 pound) boneless pork loin roast
Instructions

In a bowl, combine brown sugar, pepper, salt, garlic powder, mustard powder, ground ginger, onion powder, red pepper flakes, cayenne, cumin, paprika, and thyme. Rub this spice blend generously over the pork loin and wrap it tightly in plastic wrap. Refrigerate the seasoned pork in a 9x13-inch baking dish for at least 4 hours or overnight.

Preheat your oven to 350°F (175°C). Remove the plastic wrap from the pork and discard. Place the pork back in the baking dish.

Roast the pork in the preheated oven for about 50 minutes, until the center is slightly pink. Use an instant-read thermometer to check for an internal temperature of at least 145°F (63°C). Once done, cover the pork loosely with aluminum foil and let it rest for 10 minutes before slicing.
