Mexican Breakfast Tacos

Ingredients

6 ounces chorizo sausage

6 large eggs

¼ cup milk

½ teaspoon salt

½ teaspoon pepper

8 (6 inch) corn tortillas

1 cup shredded Monterey Jack cheese

½ cup salsa

1 dash hot pepper sauce (e.g. Tabasco™), or to taste
Instructions
Heat a large skillet over medium-high heat. Brown and crumble the sausage in the hot skillet for 5 to 7 minutes. Once cooked, remove the sausage from the skillet and set aside. Discard any grease and wipe the skillet clean with a paper towel.
Place the skillet back on medium heat and lightly coat with cooking spray. In a medium bowl, whisk together eggs, milk, salt, and pepper. Pour the mixture into the skillet and cook, stirring gently until scrambled and nearly dry. Add the cooked sausage and continue stirring until the eggs are firm.
In a separate skillet, heat over high heat. Cook the tortillas for about 45 seconds per side, until they're hot and the edges become crispy, yet still soft enough to fold.
Evenly sprinkle Monterey Jack cheese on the warm tortillas. Add the scrambled eggs, then top with salsa and a drizzle of hot pepper sauce.
