Spicy Chicken Noodle Delight

Ingredients List

Sauce Ingredients:

½ cup chicken broth

¼ cup seasoned rice vinegar

1 tablespoon hoisin sauce

1 tablespoon soy sauce, plus more to taste

1 tablespoon ketchup
-
1 tablespoon brown sugar
-
1 tablespoon sriracha hot sauce, or more to taste

1 teaspoon red pepper flakes
Noodle Ingredients:

1 (8 ounce) package dried rice noodles

1 pinch salt

8 ounces cooked chicken breast, torn into bite-size pieces

1 tablespoon sesame oil
-
1 tablespoon vegetable oil

½ cup freshly chopped cilantro
Instructions
In a mixing bowl, combine carrots, cabbage, bell pepper, jalapeno, green onions, and garlic.
In a separate bowl, whisk together chicken broth, rice vinegar, hoisin sauce, soy sauce, ketchup, brown sugar, sriracha, and red pepper flakes.
Place dry rice noodles in a large bowl and cover with 6 cups of boiling water. Add a pinch of salt and stir occasionally until the noodles soften, about 10 minutes. Drain the noodles and rinse with cold water. Drain again and transfer to a bowl. Add shredded chicken and drizzle with sesame oil. Toss everything together to coat.
Heat a large skillet over high heat and add a drizzle of vegetable oil. Once the oil is hot, but not smoking, add the vegetable mix. Stir and cook for 1-2 minutes until the vegetables are heated through and steamy. Pour in the sauce and cook for another minute, stirring constantly, until the sauce starts to bubble. Add the noodles and chicken, stirring to combine and heat everything for another minute. Remove from heat and stir in chopped cilantro.

This recipe yields 2 large servings or 4 smaller ones.
