Mexican-Style Grilled Chicken Skewers

Ingredients List

2 tablespoons olive oil

1 teaspoon ground cumin

2 tablespoons chopped fresh cilantro

1 lime, juiced

salt and ground black pepper to taste

2 skinless, boneless chicken breast halves - cut into 1 inch cubes

1 small zucchini, cut into 1/2-inch slices
-
1 onion, cut into wedges and separated
-
1 red bell pepper, cut into 1 inch pieces

10 cherry tomatoes
Instructions
In a shallow bowl, combine olive oil, cumin, chopped cilantro, and fresh lime juice. Season with salt and pepper to taste. Add the chicken pieces and mix until well coated. Cover and refrigerate for a minimum of one hour to marinate.
Preheat the grill to high heat.
Skewer the chicken, zucchini, onion, red bell pepper, and tomatoes onto the skewers.
Coat the grill with oil and place the skewers on the hot grate. Grill for about 10 minutes, turning occasionally, until the chicken is thoroughly cooked.
