3 cups all-purpose flour

5 tablespoons seasoned salt

3 tablespoons garlic powder

4 large eggs, beaten

2 (2 to 3 pound) whole chickens, cut into pieces

1 quart vegetable oil for frying
Instructions

Combine flour, seasoned salt, garlic powder, salt, and pepper in a shallow dish. Place the beaten eggs in another shallow bowl.

Coat the chicken pieces in the flour mixture, then set aside on a platter. Dip each piece in the egg wash before coating it again in the flour mixture.

Heat oil in a deep fryer or large skillet to 375°F (190°C).

Fry the chicken for 5 minutes per side. Cover the skillet, reduce the heat, and cook for an additional 10 minutes. Uncover, increase the heat, and fry for another 5 minutes per side to crisp the chicken. The chicken is done when its juices run clear and the internal temperature reaches 165°F (74°C) using an instant-read thermometer.

Place the fried chicken on paper towels to drain and keep warm in the oven until ready to serve.
