Mini Quiche Lorraine Recipe

24 (3 inch) frozen tart shells, thawed

Instructions
Preheat your oven to 375°F (190°C). Place tart shells into two 12-cup muffin pans, and line each with pie weights or dried beans to prevent them from puffing up during baking.
Bake in the preheated oven until the crust edges turn golden brown and the shells are about three-quarters of the way cooked, around 5 to 10 minutes. Remove from the oven and allow to rest until ready to use.
While the tart shells are baking, cook the bacon in a large skillet over medium-high heat, turning occasionally, until it’s crispy and browned, about 7 to 10 minutes. Drain on paper towels and crumble once cooled.
In a bowl, combine 1 cup of Swiss cheese, green onions, and the crumbled bacon. Evenly distribute the mixture among the tart shells.
In another bowl, whisk together milk, eggs, mustard, salt, and pepper. Pour the egg mixture into each tart shell, filling them about two-thirds full. Sprinkle the remaining 1/4 cup of Swiss cheese on top of the tarts.
Bake in the preheated oven until the center is set and the shells are a rich golden brown, about 25 to 30 minutes.
Cooking Tips
You can skip prebaking the tart shells, but be aware that the bottoms may end up soggy. Feel free to experiment with different fillings and cheeses to suit your taste.
