Miso-Infused Braised Pork

5 pounds pork butt (shoulder roast) cut into 2-inch slices

2 tablespoons minced garlic

1 teaspoon minced ginger

2 cups water, more if needed

⅓ cup soy sauce

⅓ cup brown sugar

¾ cup white (shiro) miso
Instructions

Heat canola oil in a large Dutch oven over medium-high heat until hot. Sear the pork slices until they are golden brown on both sides, then remove them. Add garlic and ginger, cooking for about 30 seconds until fragrant. Pour in water, soy sauce, brown sugar, and miso paste; bring to a simmer, scraping the bottom of the pot to loosen the caramelized bits.

Return the pork to the pot, adding more water if necessary to fully submerge the pork in the sauce. Reduce heat to medium-low, cover, and simmer for 3 hours until the pork is tender and the sauce has thickened to a rich consistency.
