Molasses-Brined Pork Chops

½ cup kosher salt

½ cup molasses

4 whole cloves

7 cups cold water

4 (2 1/4-inch thick) center cut, bone-in pork chops

½ teaspoon vegetable oil
Instructions
In a large container, combine hot water, salt, molasses, and cloves. Stir the mixture until the salt and molasses fully dissolve. Allow the brine to cool to room temperature before using.
Mix cold water into the molasses brine until well combined.
Fully immerse the pork chops in the molasses brine. Cover the container and refrigerate for 6 hours to allow the flavors to meld.
After marinating, remove the pork chops from the brine and gently pat them dry with paper towels. Lightly oil each chop before discarding the brine.
Preheat an outdoor grill to medium-high heat and lightly oil the grilling grate to prevent sticking.
Grill the pork chops over the hottest part of the grill for 2-3 minutes per side until browned. Move the chops to a cooler area on the grill and cook for 6-8 minutes per side until slightly pink in the center. Check for doneness with an instant-read thermometer; the internal temperature should reach 145°F (63°C).
