In a shallow bowl, whisk together the eggs, garlic powder, and onion powder. In another shallow bowl, place the cracker crumbs.

Dip the pork chops into the egg mixture, then press them into the cracker crumbs to coat evenly.

Heat oil in a large skillet over medium-high heat. Add the breaded pork chops and fry for 2 to 3 minutes per side until golden brown. Transfer the chops to a baking sheet.
Place the pork chops in the preheated oven and bake until the center is no longer pink, about 45 minutes. An instant-read thermometer should read 145°F (63°C) when inserted into the center.
