Mom's Hearty Chicken Pot Pie

1 (14.5 ounce) can peas and carrots

½ (15 ounce) can whole new potatoes, drained

1 (14.1 ounce) package double-crust pie pastry, thawed
Instructions
Preheat your oven to 425°F (220°C).
Melt butter in a large skillet over medium heat. Add onion, flour, salt, and pepper to the butter and cook, stirring occasionally, until the onion becomes translucent, about 5 minutes.
Stir in broth and milk; bring to a simmer and cook for about 1 minute until the mixture thickens slightly. Remove from heat and mix in the chicken, peas, carrots, and potatoes.
Line a 9-inch deep-dish pie pan with one sheet of pie pastry. Pour the chicken mixture into the pastry. Cover with the second sheet of pastry and press the edges together to seal. Cut a few slits in the top pastry to allow steam to escape. Place the pie on a baking sheet.
Bake in the preheated oven for about 30 minutes, or until the crust is golden brown. Allow the pie to cool and the filling to thicken at room temperature for 15 to 20 minutes before slicing.
