Mom's Savory Beef Stew with Fluffy Dumplings

For the Stew:

1 tablespoon extra-virgin olive oil

2 pounds cubed beef stew meat

1 onion, coarsely chopped

2 teaspoons steak seasoning, divided

2 stalks celery, each cut into 4 pieces

6 cups water, divided, or as needed

4 (.85 ounce) packages dry brown gravy mix

4 carrots, peeled and quartered

1 small turnip, peeled and quartered

7 potatoes, peeled and quartered
For the Dumplings:

1 ½ cups all-purpose flour

2 teaspoons baking powder
-
¾ teaspoon salt

3 tablespoons shortening

¾ cup milk

To prepare the beef stew: Heat oil in a large, heavy pot or Dutch oven over medium-high heat until the oil shimmers. Add beef and onion, seasoning with 1 teaspoon of steak seasoning. Stir well, then add the remaining seasoning. Add celery and cook, stirring occasionally, until the beef is browned, about 10 minutes.

Pour in 2 cups of water, or enough to just cover the beef and vegetables. Bring to a boil, stirring to loosen any browned bits from the bottom of the pot. Reduce the heat, cover, and simmer until the beef is fork-tender, about 2 hours.

Remove the beef and celery from the pot. Set the beef aside and discard the celery.

In a bowl, whisk together the gravy mix and 4 cups of water. Add the gravy mixture to the pot, bringing it to a boil. Return the beef to the pot and stir into the gravy.

Stir in the carrots and turnip, cover, and simmer for 20 minutes. Add the potatoes, cover, and simmer for an additional 20 minutes.

To prepare the dumplings: In a bowl, combine the flour, baking powder, and salt. Cut in the shortening with a pastry cutter or two knives until the mixture resembles coarse crumbs. Add the milk and stir gently until a dough forms.

Remove 2 cups of gravy from the pot and set aside. Drop heaping spoonfuls of the dumpling dough onto the beef and vegetables in the pot. Cover and simmer for 20 minutes (do not lift the lid during this time).

Once the dumplings are cooked, pour the reserved gravy over them, stir gently, and serve.
