Momma's Cornbread Stuffing

Ingredients

2 (16 ounce) packages dry corn bread mix

1 onion, diced

1 clove garlic, minced

1 bunch celery, chopped

6 hard-cooked eggs, chopped

1 teaspoon rubbed sage

2 (14 ounce) cans chicken broth

2 cups turkey stock

salt and pepper to taste
Directions

Prepare the cornbread according to the package instructions. Let it cool, then crumble it. Preheat the oven to 350°F (175°C).

In a large bowl, combine the crumbled cornbread, chopped onion, garlic, celery, and eggs. Gently mix together. Season with salt, pepper, and sage.

Slowly add the chicken and turkey broth, one cup at a time, until the mixture becomes moist, but not soggy.

Transfer the stuffing to a Dutch oven, or stuff it loosely into the turkey. Bake for about 1 hour, or until the stuffing reaches an internal temperature of 175°F (80°C).
