Moroccan-Style Potato Casserole

1 ½ pounds red potatoes, sliced 1/2 inch thick

1 large red bell pepper, cut into 1 inch pieces

1 yellow bell pepper, cut into 1 1/2 inch squares

1 large green bell pepper, cut into 1 1/2 inch pieces

4 stalks celery, cut into 2 inch pieces

1 pound tomatoes, each cut into 8 wedges

2 tablespoons olive oil
Instructions

Preheat your oven to 350°F (175°C).

In a food processor, combine garlic, 1/2 teaspoon salt, paprika, cumin, and cayenne pepper. Blend until the mixture forms a smooth paste. Add the fresh herbs and pulse a few times to mix. Then, add lemon juice, vinegar, and 2-3 tablespoons of olive oil, blending again. Taste and adjust seasoning with salt if needed.

In a large bowl, mix the potatoes, bell peppers, and celery. Season with salt and toss with the herb sauce. Transfer the mixture to a large shallow baking dish. Scatter chopped tomatoes throughout and drizzle with 1-2 tablespoons of olive oil. Cover with aluminum foil.

Bake for 35 minutes. Remove the foil and continue baking for another 20-30 minutes, or until the vegetables are tender. Serve warm.
