Mouthwatering Beef Tongue Tacos

Cooking Instructions

Place the beef tongue in a slow cooker, covering it with water. Add sliced onions, garlic, and bay leaves. Season with salt, cover, and cook on low for about 8 hours or overnight. Once cooked, remove the tongue and shred the meat into fine strands.

Heat oil in a skillet over medium heat. Sauté the tomatoes and peppers until softened on all sides. Transfer the vegetables to a blender, keeping the oil in the skillet. Season with salt and blend until the mixture is still slightly chunky. In the same skillet, cook the diced onions until soft, then stir in the blended tomato mixture. Let it cook for another 5-6 minutes. To assemble the tacos, place the shredded beef tongue into a tortilla and top with the salsa.
