Cooking Instructions
In a large bowl, mix the yogurt with tandoori masala powder until well blended. Add the chicken pieces and toss to ensure an even coating. Let the chicken marinate in the fridge for an hour. Once done, drain off any excess marinade and discard.
Blend the onion, ginger, and garlic with water in a blender until smooth. Set the paste aside for later use.
Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chicken and cook until golden brown on all sides, about 5 minutes. Remove the chicken from the skillet and set it aside.
In the same skillet, heat the remaining 2 tablespoons of oil. Add the onion paste and cook until most of the moisture has evaporated, about 3 minutes. Sprinkle in the garam masala and chili powder, and cook for an additional minute. Stir in the tomato sauce, lower the heat to medium-low, and simmer for another 5 minutes.
Return the chicken to the skillet along with half-and-half. Bring the mixture to a boil, then add butter, fenugreek leaves, and salt. Reduce the heat to low and simmer uncovered until the chicken is cooked through and no longer pink, about 15 to 20 minutes.
