Mussels in Marinara Sauce di Amore

8 ounces linguine pasta

1 tablespoon olive oil

1 clove garlic, minced

1 (14.5 ounce) can crushed tomatoes

½ teaspoon dried oregano

½ teaspoon dried basil

1 pinch crushed red pepper flakes

1 pound mussels, cleaned and debearded

¼ cup white wine

1 medium lemon, cut into wedges

1 tablespoon chopped fresh flat-leaf parsley, or to taste
Cooking Instructions

Bring a large pot of lightly salted water to a boil. Cook the linguine in the boiling water until al dente, about 8 to 10 minutes.

While the pasta cooks, heat oil in a large skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Stir in the tomatoes, oregano, basil, and red pepper flakes, then reduce the heat and simmer for 5 minutes. Add the mussels and wine, cover, and increase the heat to high. Cook until the mussel shells open, about 3 to 5 minutes.

Drain the pasta and return it to the pot. Pour the mussels and tomato sauce mixture over the pasta. Squeeze lemon wedges over the top and garnish with fresh parsley.
