Mustard-Marinated Skirt Steak: Grilled or Pan-Seared

2 pounds beef skirt steak

2 tablespoons lemon juice

⅓ cup prepared spicy brown mustard

1 pinch salt and pepper to taste

1 cup blue cheese dressing (Optional)
Cooking Instructions

Mix mustard and lemon juice in a small bowl. Trim excess fat from the steak and coat with the mustard mixture. Place the steak in a resealable bag and refrigerate for at least 1 hour, or up to 24 hours.

Heat a grill or large skillet to medium-high heat.

Grill or pan-fry the steak for about 5 minutes per side, or until desired doneness. Let it rest for 5-10 minutes before slicing against the grain into 4 pieces. Serve with blue cheese dressing.
