Nana's Beef Stroganoff

Ingredients

1 tablespoon all-purpose flour

1 ½ pounds beef sirloin, cut into 1/4-inch wide strips

2 tablespoons unsalted butter

1 cup mushrooms

½ cup chopped onion

1 clove garlic, crushed

2 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 tablespoons tomato paste

1 ¼ cups chilled beef stock

1 cup sour cream

¼ cup dry white wine
Instructions

In a large resealable bag, combine 1 tablespoon of flour and 1/2 teaspoon of salt. Add beef and shake well to coat.

In a skillet, melt 2 tablespoons of butter over medium-high heat. Brown the beef for about 3 minutes per side. Add mushrooms, onions, and garlic, then cook and stir for 3-4 minutes until the garlic becomes fragrant. Transfer the beef mixture to a bowl, keeping the drippings in the skillet.

Melt the remaining 2 tablespoons of butter in the same skillet over medium heat. Stir in 3 tablespoons of flour and cook until smooth. Add tomato paste, followed by beef stock, and stir constantly until the mixture thickens and begins to bubble, about 5 minutes.

Return the beef mixture to the skillet, stirring to coat with the sauce. Lower the heat to very low and simmer for 2-3 hours, until the beef becomes tender. The longer the beef cooks, the more tender it will be. Just before serving, stir in sour cream and white wine, then heat through, but do not bring to a boil.
