Nana's Classic Southern Pickled Peaches

4 pounds fresh clingstone peaches, blanched and peeled

5 (3-inch long) cinnamon sticks
Instructions
Thoroughly inspect five quart-sized jars for any cracks and check the rings for rust. Discard any damaged items. Place the jars in simmering water and set aside until the peaches are ready. Wash new lids and rings in warm, soapy water before use.
In a large pot, combine sugar, vinegar, and water. Bring to a boil and cook until the mixture thickens into a syrup, about 5 minutes.
Insert one or two cloves into each peach. Add the peaches to the boiling syrup and cook until tender, about 20 minutes.
Carefully spoon the peaches into hot, sterilized jars and pour the syrup over them, filling each jar up to 1/2 inch from the top. Place one cinnamon stick in each jar. Wipe the jar rims with a clean cloth, then seal with the lids and rings.
Set a rack at the bottom of a large stockpot and fill it halfway with water. Bring to a boil, then use a jar holder to lower the jars 2 inches apart into the water. Add enough boiling water to cover the jars by at least 1 inch. Bring to a full boil, cover, and process for 10 minutes to seal, or follow your local processing guidelines.
Remove the jars from the boiling water and allow them to rest, spaced a few inches apart, for 12 to 24 hours. Press the center of each lid to ensure it is properly sealed and does not flex up or down. Once sealed, remove the rings and store the jars in a cool, dark place.
