Okinawa Shoyu Pork
Ingredients

1 ½ pounds whole pork belly

½ cup soy sauce

½ cup packed brown sugar

½ cup water

½ cup mirin (Japanese sweet wine)

2 teaspoons ground ginger

1 clove garlic, or to taste
Instructions

Place the pork belly in a large pot and cover it with water, ensuring the water level is about 1 inch above the pork. Bring to a boil over medium-high heat, then let it simmer for 2 minutes. Discard the water and refill the pot with fresh water, again covering the pork by about 1 inch. Bring to a boil, then reduce the heat to a simmer. Cook the pork until it starts to soften, approximately 1 hour.

Remove the pork from the pot and transfer it to a cutting board. Let it cool for a few minutes before slicing off the thick skin and discarding it. Cut the remaining pork into 1-inch wide slices and set them aside.

In a large saucepan, combine soy sauce, brown sugar, 1/2 cup of water, mirin, ginger, and garlic. Bring to a boil over high heat. Add the sliced pork belly and bring the mixture to a boil again. Lower the heat and cover the meat with a sheet of aluminum foil. Let it simmer uncovered for 30 to 45 minutes, turning the pork several times to ensure it cooks evenly and becomes tender.
Cook’s Tip
Pork belly is the ideal choice for this recipe, but pork tenderloin or boneless pork short ribs work just as well.
If you prefer, you can replace 1/2 cup of water with katsuo dashi, a fish-based stock made from water and bonito flakes. To prepare katsuo dashi, bring 1 to 2 cups of water to a boil and add about 1/2 cup of bonito flakes. Simmer for a few minutes, then strain the flakes out to leave only the flavorful stock.
