One-Pot Chicken and Sausage Orzo Meal

2 teaspoons olive oil

12 ounces spicy Italian sausage, casings removed

1 pound boneless, skinless chicken thighs, cut into bite-size pieces

1 teaspoon salt, or to taste

3 cups chicken broth, plus more as needed

½ cup tomato sauce

1 ½ cups uncooked orzo (rice-shaped pasta)

1 teaspoon kosher salt, or to taste

½ cup finely grated Parmigiano-Reggiano

¼ cup chopped Italian parsley

2 tablespoons sliced fresh chives

4 tablespoons ricotta cheese for garnish
Instructions
Heat a pot over medium-high heat and add oil. Brown the crumbled sausage, stirring occasionally and breaking up the pieces as it cooks, for about 5 minutes. Add the chicken pieces, cooking and stirring until the chicken starts to turn opaque, about 1 minute. Season with salt.
Add the chicken broth and tomato sauce, then increase the heat to high to bring the mixture to a simmer. Stir in the orzo and a pinch of salt. Lower the heat to medium and cook until the pasta is nearly tender and most of the liquid has been absorbed, about 10 to 12 minutes. Stir occasionally to prevent sticking. Remove from heat, then mix in the grated cheese, parsley, and chives. Serve with a spoonful of ricotta cheese on top.
Recipe Tips
The size of orzo grains may vary, so check for doneness a bit early and stop when the pasta is 95% cooked. It will continue to soften as it sits in the pot.
You can swap in two boneless, skinless chicken breasts instead of using thighs.
