Onigiri: Japanese Rice Balls
Ingredients

4 cups uncooked short-grain white rice

5 ½ cups water, divided

¼ teaspoon salt

¼ cup bonito shavings (dry fish flakes)

2 sheets nori (dry seaweed), cut into 1/2-inch strips

2 tablespoons sesame seeds
Instructions
Rinse the rice in a fine mesh strainer until the water runs clear. Combine the rinsed rice with 4 1/2 cups of water in a saucepan. Bring it to a boil over high heat, stirring occasionally. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 to 20 minutes until the water is absorbed. Let the rice rest for 15 minutes to finish steaming and become tender. Once cooled, the rice is ready to use.
Mix the remaining 1 cup of water with salt in a small bowl. Use this mixture to moisten your hands before handling the rice. Divide the cooked rice into 8 equal portions, using one portion for each onigiri.

Take one portion of rice and divide it in half. Make a small indentation in the rice and fill it with a generous teaspoon of bonito flakes. Cover the filling with the other half of the rice and gently press to seal it inside. Shape the rice into a triangle, wrap it with a strip of nori, and sprinkle with sesame seeds. Repeat with the remaining rice portions.
