Ingredients List
-
1 cup brown rice
-
2 ½ cups water
-
1 pound salmon fillet
-
¼ cup orange juice
-
1 teaspoon dried dill weed
-
1 teaspoon dried rosemary
-
1 teaspoon dried basil
-
1 teaspoon dry mustard
-
1 teaspoon lemon pepper
Step-by-Step Instructions
-
Bring 2 1/2 cups of water to a boil in a saucepan. Add rice and stir. Lower the heat, cover the pan, and let it simmer for 20 minutes.
-
Preheat your oven to 350°F (175°C).
-
In a large baking dish, add just enough water to cover the bottom. Place the salmon, skin side down, and surround it with the cooked rice. Drizzle orange juice over the salmon and rice.
-
In a small bowl, combine dill, rosemary, basil, mustard, and lemon pepper, then sprinkle this herb mix over the salmon and rice. Cover with aluminum foil.
-
Bake in the oven for 30 to 40 minutes, or until the salmon is cooked through and flakes easily with a fork.
