Oven-Roasted Brussels Sprouts

2 pounds Brussels sprouts, ends trimmed and yellow leaves removed

½ cup butter, cut into pieces

1 teaspoon kosher salt

½ teaspoon ground black pepper

¼ cup fresh lemon juice

¼ cup pine nuts

½ cup crumbled blue cheese (Optional)
Instructions

Preheat your oven to 350°F (175°C).

Place the Brussels sprouts in a casserole dish or Dutch oven with a lid. Dot with butter and season with salt, pepper, and a splash of lemon juice. Cover with the lid.

Bake in the preheated oven for 25 minutes or until the sprouts are just tender. Stir occasionally to prevent sticking. In the last 10 minutes, sprinkle pine nuts over the sprouts and remove the lid. Once done, sprinkle crumbled blue cheese on top before serving.
