Smoked Sausage, Apple, and Root Vegetable Sheet Pan Dinner

8 ounces baby carrots

8 ounces Brussels sprouts, halved lengthwise

1 small red onion, peeled and cut into 8 wedges

3 tablespoons olive oil

2 teaspoons chopped fresh rosemary

1 teaspoon kosher salt

½ teaspoon black pepper

1 (12 ounce) package Hillshire Farm Rope Smoked Sausage, cut in 1/2" bias-cut slices

1 medium Honeycrisp apple, cut into 12 wedges

1 lemon, halved
-
2 tablespoons chopped parsley
Instructions
Preheat your oven to 450°F (232°C) and place a large baking sheet inside to warm up.
In a large bowl, combine the carrots, Brussels sprouts, onion, olive oil, rosemary, salt, and pepper. Toss until evenly mixed. Spread the vegetable mix and sausage in a single layer on the preheated pan.
Place in the preheated oven and bake for about 20 minutes, or until the vegetables are just tender. Remove from the oven.
Set the broiler to high.
Add the apple to the pan and broil for 5 to 6 minutes, or until the apple is tender and the vegetables are slightly caramelized. Once done, remove from the oven, squeeze lemon juice over the mixture, and garnish with parsley.
