Instructions

Heat oil in a large pan over medium heat. Fry the paneer in batches until golden brown, about 5 minutes. Transfer to a paper towel-lined plate to drain, leaving the oil in the pan.

In the same pan, melt butter over medium heat. Sauté onions until golden, about 10 minutes. Add ginger and garlic pastes, and cook for another minute until fragrant. Stir in cashews, ground red chili, cumin, coriander, and garam masala. Cook for another minute to release the flavors.

Add tomato sauce, half-and-half, milk, sugar, and salt to the spiced mixture. Simmer for about 5 minutes until the sauce thickens. Reduce the heat to low and add the fried paneer. Simmer for an additional 5 minutes until the paneer is heated through.
Chef's Tip
Frying the paneer is a key step to avoid it becoming too soft and mushy when added raw. However, if you prefer to skip frying, you can still make this dish without it, especially if you're trying to avoid fried foods.
