Parmesan-Crusted Roasted Cauliflower

Ingredients Needed

1 (3 pound) cauliflower

¼ cup water, or as needed

¾ cup mayonnaise

¼ cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon chopped fresh chives
Instructions

Preheat your oven to 350°F (175°C).

Remove the leaves and bottom core of the cauliflower. Place it in a shallow microwave-safe dish with about 1 inch of water.

Microwave on high for 8 minutes, then drain the water.

In a small bowl, mix together mayonnaise, Parmesan cheese, and garlic until smooth. Spread this mixture evenly over the cauliflower.

Bake in the preheated oven for 15-20 minutes, or until golden and tender. Garnish with chives before serving.
