Peanut Butter and Banana Stuffed French Toast

1 dash vanilla extract

2 tablespoons creamy peanut butter

2 slices bread

1 small banana, sliced

2 tablespoons butter
Instructions
In a shallow bowl, whisk together the egg and vanilla extract until well combined.
Spread a tablespoon of peanut butter on each slice of bread. Place banana slices over the peanut butter on one slice, then top with the second slice, peanut butter-side down, to form a sandwich.
Melt butter in a skillet over medium heat. Dip the sandwich into the egg mixture, ensuring it's fully coated, then transfer it to the hot skillet. Cook until one side is golden brown, about 2 to 3 minutes, then flip and cook the other side for another 2 minutes, or until browned. Serve immediately while hot.
