Penne Pasta with Chicken and Pesto Sauce

1 (16 ounce) package penne pasta

2 tablespoons butter

2 tablespoons olive oil

4 skinless, boneless chicken breast halves - cut into thin strips

2 cloves garlic, minced

salt and pepper to taste

1 ¼ cups heavy cream

¼ cup pesto
-
3 tablespoons grated Parmesan cheese
Instructions

Bring a large pot of salted water to a boil. Add the penne and cook for 8 to 10 minutes, or until the pasta is al dente. Drain well.

In a large skillet, heat butter and olive oil over medium heat. Add the chicken and garlic, sautéing until the chicken is almost fully cooked. Lower the heat and stir in the salt, pepper, cream, pesto, and Parmesan cheese. Continue cooking until the chicken is thoroughly cooked through. Toss in the cooked penne and mix well.
