Penne Pasta with Mushrooms

1 (8 ounce) package dry penne pasta

¼ cup olive oil

1 clove garlic, finely chopped

1 pound button mushrooms, sliced

salt and freshly ground black pepper to taste

1 tablespoon butter

1 ½ teaspoons chopped fresh parsley

¼ cup grated Parmesan cheese
Instructions

Bring a large pot of salted water to a boil. Add the penne pasta and cook for 8 to 10 minutes, or until al dente. Drain the pasta.

In a large skillet, heat oil over medium heat. Add garlic and mushrooms, cooking until the mushrooms are soft. Season with salt and pepper, then stir in the butter.

Toss the cooked pasta with the mushroom mixture in a large bowl. Top with Parmesan cheese and garnish with parsley before serving.
