1 cup quinoa, rinsed and drained

2 cups chicken broth

2 tablespoons basil pesto

1 tomato, diced

Instructions

In a saucepan, bring quinoa and chicken broth to a boil. Once boiling, cover, reduce heat, and let simmer until the liquid is absorbed, about 15 minutes.

Remove the saucepan from the heat and stir in the pesto. Gently fold in the tomato. Season with salt and pepper to taste.
