Porcupine Meatballs II

Ingredients

1 (10.75 ounce) can condensed tomato soup

½ cup water

1 ½ pounds ground beef

1 cup uncooked instant rice

1 tablespoon minced onion

1 teaspoon salt

1 dash ground black pepper
Instructions

In a medium bowl, mix together the tomato soup and water until well combined. Set aside.

In a large bowl, combine the ground beef, instant rice, onion, salt, pepper, and 1/2 cup of the soup mixture. Mix well, then shape the mixture into 1-inch meatballs.

Place the meatballs in a large skillet over medium heat. Pour the remaining soup mixture over the meatballs and bring to a boil. Reduce the heat to simmer and cook for 15-20 minutes, or until the meatballs are browned and the rice is fully cooked.
