Cajun-Style Meatloaf

4 tablespoons butter

¾ cup chopped onion

½ cup chopped green bell pepper

¼ cup chopped green onions

4 cloves garlic, minced

1 tablespoon hot pepper sauce

1 tablespoon Worcestershire sauce

½ cup evaporated milk

½ cup ketchup

1 ½ pounds ground beef

½ pound andouille sausage, casings removed

2 eggs, beaten

1 cup dried bread crumbs
Instructions

In a small bowl, mix together the bay leaves, salt, cayenne pepper, black pepper, white pepper, cumin, and nutmeg. Set the seasoning blend aside.

In a saucepan over medium heat, melt the butter or margarine. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and the reserved seasoning mix. Sauté the mixture until it begins to stick to the pan, about 6 minutes. Stir in the milk and ketchup, and cook for an additional 2 minutes, stirring occasionally.

Remove the vegetable mixture from heat and let it cool to room temperature. In a greased 9x13-inch baking dish, combine the beef and sausage. Add the eggs, vegetable mixture, and breadcrumbs. Discard the bay leaves. Mix the ingredients thoroughly by hand and shape into a loaf about 1 1/2 inches high.

Bake uncovered at 350°F (175°C) for 25 minutes. Increase the temperature to 400°F (200°C) and bake for another 35 minutes. Let the meatloaf rest for 5 minutes before serving.
