Pork Butt Roast with Roasted Vegetables

2 onion, sliced

20 new potatoes, raw

16 carrots, peeled

2 cups mushrooms, halved
Instructions

Gather your ingredients and preheat the oven to 350°F (175°C).

Heat a large skillet over medium-high heat. Season the pork roast with garlic powder, salt, and pepper, rubbing the seasoning into the meat. Sear the roast on all sides until lightly browned. Transfer to a roasting pan.

Arrange onion slices over the pork in the roasting pan, then add water to fill the pan about 2/3 full.

Cover the pan and bake for 3 hours. After that, add the potatoes and carrots, cover, and bake for another 45 minutes. Add the mushrooms and bake for 15 more minutes. Let the roast rest for at least 10 minutes before serving.
