In a bowl, combine seasoned salt, garlic powder, black pepper, and paprika. Rub approximately 3/4 teaspoon of the mixture onto each pork chop, then dredge them in flour, ensuring they are fully coated. Set aside the remaining seasoning mix and flour for the gravy.

Heat vegetable oil in a large skillet over medium-high heat. Add the pork chops and cook until they are golden brown, about 3 minutes per side. Remove the chops from the skillet and set them aside on a plate, covering them with paper towels. Retain the drippings in the skillet.

Add sliced onions to the skillet and cook, stirring frequently, until they turn brown, about 5 to 10 minutes. Add the mushrooms, the remaining flour, the leftover seasoning mix, and a teaspoon of water if necessary to moisten. Continue to cook and stir until the onions become golden, roughly 5 minutes.

Pour in 2 cups of water, stirring until the gravy becomes smooth. Bring the mixture to a boil, then return the pork chops to the skillet. Lower the heat, cover, and let it simmer for about 1 hour, or until the pork chops are tender. Use an instant-read thermometer to ensure the internal temperature reaches at least 145°F (63°C).
