Cooking Instructions

Heat a skillet over medium-high heat, coat with cooking spray, and quickly sear the pork chops on both sides. Set aside to rest.

Layer the sweet potato slices in the base of a 3 to 4-quart slow cooker. Top with onion rings, then apple slices. Sprinkle brown sugar, nutmeg, and salt over the apples, and season with freshly ground pepper. Place the browned pork chops on top and finish with a layer of sauerkraut. Cover and cook on Low for about 5 hours, with an optional extra hour for added tenderness.
