Pork Spare Ribs with Sauerkraut

1 rack pork spareribs, cut into 2-rib portions

salt and pepper to taste

1 (16 ounce) jar sauerkraut, drained

4 red potatoes, quartered
Cooking Instructions

Preheat the oven to 450°F (230°C). Lightly grease a 9x13-inch baking dish with cooking spray.

Season the ribs with salt and pepper, then place them in the prepared baking dish.

Roast the ribs in the oven for 20 to 25 minutes. Once done, remove them from the oven and reduce the temperature to 350°F (175°C).

Transfer the ribs to a plate and discard any excess grease from the baking dish. Spread the sauerkraut evenly in the dish, then place the ribs on top with the meaty side facing up. Tuck the potatoes between the ribs. Cover the dish tightly with aluminum foil.

Return the dish to the oven and bake for another 30 minutes. Ensure the ribs reach an internal temperature of 145°F (63°C) using a meat thermometer. Carefully remove the foil, being cautious of the hot steam, and serve.
