Skirt Steak with Marsala Wine Marinade

⅔ cup Marsala wine

¼ cup ketchup

6 cloves garlic, minced

2 teaspoons kosher salt

1 teaspoon dried rosemary

1 teaspoon ground black pepper

1 (1 1/2-pound) skirt steak, cut in half across the grain
Instructions
In a large glass or ceramic bowl, whisk together Marsala wine, ketchup, garlic, kosher salt, rosemary, and black pepper. Add the skirt steak and turn to coat the meat evenly. Cover the bowl with plastic wrap and refrigerate for 8 hours or overnight to marinate.
Prepare your outdoor grill by heating it to high and lightly greasing the grate.
Take the steak out of the marinade, shake off any excess liquid, and discard the marinade.
Grill the steak on the preheated grill for 3 to 4 minutes on each side until the surface is glossy. Use an instant-read thermometer to check that the internal temperature reaches 130°F (54°C). Transfer the steak to a plate and let it rest for at least 5 minutes before slicing it against the grain.
