Potato Gnocchi Dumplings

2 large potatoes, peeled and chopped

1 cup self-rising flour

1 egg

8 large seasoned croutons
Cooking Instructions

Bring a large pot of salted water to a boil. Add the potatoes and cook until soft, about 15 minutes. Drain and mash them well.

In a medium bowl, mix 2 cups of mashed potatoes with flour and egg. Shape the mixture into dumplings, using about 1/4 to 1/2 cup per dumpling. Press a crouton into the center of each and seal the dough around it.

Drop the dumplings into simmering soup or broth. Cover and cook for 20 minutes. Do not lift the lid during the cooking process.
