Pressure Cooker Red Beans with Sausage

Ingredients List

1 pound dried red beans, rinsed

1 (1 pound) package smoked sausage, sliced

1 bay leaf

2 tablespoons Cajun seasoning, or to taste

½ clove garlic, chopped

½ onion, chopped

1 stalk celery, chopped

½ green bell pepper, chopped

1 teaspoon salt

1 teaspoon dried parsley

¼ teaspoon ground cumin

5 cups cold water, or as needed
Instructions

Add red beans, sausage, bay leaves, Cajun spices, garlic, onion, celery, bell pepper, salt, parsley, and cumin into the pressure cooker. Fill with enough water to cover the ingredients, following the manufacturer's guidelines (do not exceed the fill line). Stir everything together.

Close the lid securely and bring the cooker to full pressure on high heat. Once at full pressure, reduce the heat to low and cook for 30 minutes. Let the pressure release naturally, then open the lid, stir the contents, and serve.
Cook's Tip
I personally prefer using Conecuh hickory-smoked sausage from Alabama for its rich flavor.
