Quick and Simple Curry Couscous

Ingredients List

1 ½ cups couscous

3 cups chicken stock

1 tablespoon curry powder

2 teaspoons salt

1 teaspoon ground black pepper

2 tablespoons extra-virgin olive oil

½ cup raisins
-
1 bunch cilantro, chopped

½ cup slivered almonds, toasted
Instructions

Place couscous into a large bowl and set aside.

In a large saucepan, combine chicken stock, curry powder, salt, pepper, olive oil, and raisins. Bring to a boil, then remove from heat. Pour the hot mixture over the couscous. Cover the bowl with plastic wrap and let it sit for 10 minutes.

Fluff the couscous with a fork, then garnish with fresh cilantro and almonds.
